Generally speaking you should look at it this way. Use the Single Hole needleplate when working on firm and thicker fabrics. Use the Multi-Hole needleplate when working on softer and finer fabrics. The finer fabrics may be pushed into the single-hole, which may distort your work. Think of it in a similar vein to a wide, zig-zag needleplate. Or the single hole needleplate used for straight stitch work.
